2020 started out as a slap-bang year for catering. I had parties booked from January through December. Unfortunately, around the middle of March, like with most event businesses, Covid-19 started ruining lots of party plans. During the entire 33 years that Catering by Debbi Covington has been open, I've done all of the cooking. I don't have an on-site staff. However, I could never do what I do without the help of my “trusty sidekicks.”
It's hard to believe that Christmas is less than four weeks away. So much to do, so little time! What it is about December that pulls us into our kitchens with bags of flour, sugar, nuts and cranberries? Why do we develop a sense of determination that makes us want to bake every Christmas sweet recipe that we've seen in magazines, on Pinterest and (hopefully) in Lowcountry Weekly's Celebrate Every Day columns?
It's one of my favorite things to be thankful for. I don't have to cook Thanksgiving dinner. Vince and I are blessed to be invited to a gathering of friends every year. All we have to do is show up with a side dish. In true southern fashion, the turkeys are deep-fried and everyone takes copious amounts of vegetables, salads, side dishes and desserts. In keeping with the spirit of not being responsible for the main course, I'm sharing a couple of delicious Thanksgiving side dish recipes and a seasonal cocktail. In spite of the experience of a very trying year, we have so much to be grateful for. Celebrate every occasion. Happy Thanksgiving!
Yay for cooler weather with no humidity! Beaufort friends, we still have a few weeks before Thanksgiving, so let's celebrate a wee bounty of autumn comfort cuisine. The recipes this week are some of my favorite crisp weather contentment foods.
Love does conquer everything! It all began with a phone call from Polly, the mother of the bride. “My daughter and her fiance had booked their wedding and reception on Fripp Island. And now, coronavirus has made it necessary for them to change their plans and reschedule their wedding reception to October of 2021. They don't want to wait another year to be married and are going to elope on Fripp Island on October 1st. Would you be available to cater a private dinner for the two of them on their wedding night?”
When I was sixteen years old, on the “edge of seventeen” (Stevie Nicks fans will know what I'm talking about), my high school boyfriend turned eighteen, on November 4th, election day 1980. I went with him to the Post Office to register for Selective Service and then stood in line with him for several hours so that he could cast his first vote for the President of the United States.
